General question here, how long have you fully sealed frozen briskets in a freezer. I went through my chest freezer and realized I had 2 SRF briskets at the bottom. I thought about defrosting one to see if they were any good. But Iím afraid that after taking Almost 2 years off competition bbq they will be no good.

If the cryo is not broken it should be ok. I had one that I found but the cryo had a leak. It was not bad but not great. The freezer burn did it in.

If it doesn't have freezer burn, it is fine. Even if it does, on large cuts like brisket, you can generally trim the bad off, and it will be fine. I butcher a steer every couple of years, so it is common for me to have 2 year old beef in my freezer. I rarely have a problem, since I have it vac sealed at the processor.

I buy quarters of beef each year and every once in while I find a cut from previous years. Usually they are fine and I have a frost free freezer. If you have a frost freezer they will last even longer.
