my version of Kabana, a snack sausage, smoked and Cooked.
usually eaten as part of a Cheese platter.
based on my sausage mentors recipe.

Kabana is warmed for an hour, smoked for a few then cooked until 65c internal and held for an hour.
Ice bath for an hour .

Smoker is an old bread proofer with added bits.
Smoke generator and using my go anywhere as a heat source.

make these smaller and call them Kransky.
Most delicious sausage, 3.5 kilo of pork and back fat, 1.5 kilo of very fine beef mince.

Very nice. is that fresh or cured? I wanna break into this kind of sausage.. Kielbasa or something similar. Only fresh sausage I've made is bratwursts

What we Call Quikcure, about 11.5 percent strong.
Slap Ya Mama red blend
slap Ya Mama White Blend
Garlic powder
Chardonay.
Allspice( pimento)
salt
Full Cream milk powder.
Cayenne pepper next time
