Cut it in half since our expected guests could not make it. Still plenty for two and enough to cube for a green chili today. I rubbed it with garlic, Malabar black pepper and thyme, then a little olive oil. No salt because it was a Costco rack. so prebrined. I served an oak smoked salt with it at table which was tasty. Did not take a great deal of smoke flavor, even though I used a baseball sized hunk of hickory. May have been due to the olive oil and the fat rendering.

Sliced. Just a little more done than I thought, pulled at 140 but I may have had the probe too close to the bone.

Orange pickled roasted beets with goat cheese and candied pecans. This is a side dish I had at Weber Grill on Thanksgiving. It was so great I decided to recreate it at home. Used a Rachel Ray recipe, but halved the sugar. Recipe link on request.
