View Full Version : Friday was fatty day

In line with my status on this forum, it was time to make my 1st fatty.

Used 50/50 beef/pork minced meat, used a ziplock bag to roll it out, worked really well.
Stuffed with dried tomatoes and baked onion/garlic.
Rubbed with our home made spicy rub.
The bacon I used for the weave was to short and to thin but it worked out in the end.
About 2 hours on the Traeger at 250 and then turned it up to give the bacon some more color.
Served with green beans and some bread.

It was fantastic, even the misses loved it. Next time I'm making 2 so I can add some cheese, the misses doesn't eat melted cheese (her loss :-P).

Very impressive - and I appreciate the pictures very much! The bacon weave turned out great, but the final product off the cooker was magazine worthy! Nicely done!!
