Been a while since we’ve had brisket. Didn’t find a packer but did grab a CAB flat that looks pretty good. Trying Butchers BBQ’s injection for the first time. Rubbed with Black Ops and waiting to go on

Plan is a couple hours at 180 on the Rec Tec and then up to 225 for the rest of the night.

Had some problems with the Rec Tec wanting to hold the 180 level last night. Bounced around a lot, mostly lower that. Wouldn’t have hurt anything to just let it go but decided just to take it to 225 and let it go. Ran dead steady there all night.

Sitting about 8 1/2 hours in and at 168. just wrapped it.

I had someone else recently recommend the 120 but haven't come across it yet. The only one from Dogfish Head I really didn't like -- as in couldn't finish it -- was the SeaQuench.

All of Dogfish Head's IPAs are delicious. Deschutes Fresh Squeezed IPA, Cincinnati's own Rivertown IPA are my two current in rotation.

The 120 is excellent, difficult to find though. It packs a punch, definitely a sipping beer! Nice looking brisket too!

Pretty happy with how it came out. We made up a plate inspired by a place near Baylor where my daughter went. Fritos, beans, sausage and the brisket. Sauce from the place that did the original.

Most places around me call that a trash can plate. No idea why it's always on a bed of Fritos? Good stuff.

I saw something mildly similar with Doritos once but agree, Fritos seems to be the base more typically. It's possible it's because of it's similarity to a corn tortilla so a spin on americanized tacos. Or, it could just be because it's good.
