First lesson - it takes an hour to get the thin blue smoke , even if the sticks are on fire.

Excellent place to run your Pecos.

Much better view than I have when I run my Pecos, lol.

Great smoker.

Get a stash of hickory and other woods and get ready to feed the beast.

I've run my Pecos a couple times and have been able to get thin blue smoke in a fairly quick time.

I begin with a layer of Kingsford from a full chimney load.....then lay some dry wood over the hot coals....and run it with the door & smoke stack both wide open.

A buddy gave me a tip to leave the door wide open for a few minutes after laying new sticks in there for a few minutes...then close door with vent fully open.

It worked like a charm.

Excellent smokers that are well laid out.

I have only had my offset for a few months but I have had great luck getting the cooker ready to cook in 20 min or less using the weed burner, it has changed my life. Not only for the offset but the santa maria and barrel are ready in no time also.

Grats on the new iron. Had 2 different ones in my sights during the summer but could not get the sellers to respond. People are strange- I would have thought the reason you posted it on CL was to sell it. /shrug

These pics are from the seller. I couldn't afford a place that nice.

They don't respond then if they do sell it they leave the ad on so you can take time to ask any it only for them to respond "sold"

So I think the seller got rid of this unit because he was getting inconsistent results.

I think I know why. The gauge he bought (I think it's the old country one) is pure unadulterated JUNK!!

compared to me Thermoworks gauge it would sometimes read high, sometimes low , sometimes spot on.

One time it read 250 degrees and the other gauge read 250 .another time it was showing 250 degrees and the thermoWorks gauge was showing 335 degrees. crazy.

I could see how depending on this stupid gauge could have got him bad results that made him sell it.

Moral -please don't buy a junk gauge
