I'm wet brining for the first time this year. I'm doing 2, 10-12 lb fresh turkey breast. Do I brine at 1 hour per 1 lb like a whole turkey? What would be too long in the brine? Lastly, do I rinse and then let sit uncovered in the fridge for a few hours?
