We need to kick this TD into gear.
I wanted a guuuud turkey sammich before Thanksgiving so.....
Off work today and went shopping, bringing this bird home :thumb:

A real nice 12lb-er. There were breasts also but they were frozen so I decided to go full bird and "process" it myself

Did you actually cook the game changer brine for the injection? What did the injection consist of? I have a whole bag of the game changer brine I haven't even used yet.. Curious to know how you made the injection as I might use it for my thanks giving turkey

Only my second time using it and first time around was just to brine chicken.
As for today, I'm in a pinch so brought some water up to almost boiling, stirring in the GC, put some ice in to bring temps down back down and into the fridge. Quick chill method basically. It's chilled now and just injected the breasts. Going to leave them alone for a couple of hours.
They plumped up nice after the injection

Love Turkey sammiches but I just use one of those sammich makers kinda like a waffle maker.
Smoked Turkey, maybe dressing, and cheese. Close it down and lock for about a minute and open up to a hot melty mess of goodness.
I am sure your will be much more complicated and to die for!

That looks like an out of the park grand slam sammich to me. I have just enough left over smoked turkey from my last cook along with a couple of slices of homemade bread that I know what I will be having for lunch today. I know it cannot possibly as good as yours but
It will have to do until I smoke a turkey again.

Thanks Bill! It came out better then I expected it to. The scent of the fresh bread and taste of the smoked turkey was a heavenly combo through each bite.
