I know somebody on this forum has thought about it before. I usually spatchcock and put it on the grate, but this saturday I'm doing 2 birds on the PBC hangers.
Should I hang with breasts facing in to the middle or facing outside? Conventional wisdom is that the middle is directly over where I put the hot coals when starting. Although... I see a lot of diagrams of a heat vortex along the outside. I want to give the dark meat a chance to get hotter.
