Tonight I made spatchcock mojo chicken, and grilled potatoes. The son sautéed mushrooms and zucchini and added some chopped tomatoes at the end.

I seldom smoke whole chicken anymore. Most of the time I either smoke pieces or Spatchcocked chicken. When I was a kid my dad was a butcher. He called it 'Butterflying' the chicken.

Mojo is a marinade with orange, lemon, and lime juices as a base. Spices like cumin, salt, pepper, garlic, and oregano are added as well. I just buy the Goya mojo marinade as it's cheaper than buying all those juices and way easier! If you have a Pollo Tropical in your area then the chicken would taste similar.
