Bride had a quick response. 12# packer- trimmed and seasoned with an ongoing FrankenRub. Kind of like one of those perpetual bread starters. Weber Coals, Pecan-mesquite-maple chunks. Hanging since 1:30- I’ll lift the lid and probably wrap around 5:30.

Brisket wrapped at 4 hours and on the grate. Fattys seasoned and placed.

LOL @ Frankenrub, and I totally get it. The first ingredient in my rub recipe is "whatever is left from the previous batch of rub"

It’s a PBC thing. It works. Ain’t dropped one yet. Fattys are done
