Have about 3 hours on 2 racks - looking good !
WSM at about 250/275. Wondering if I should wrap these or let them go.
Getting pull back already- looking for thoughts and recommendations.

If you like your color and the bark is set why not wrap em up? Obviously it will speed em up so keep track unless you want fall off the bone. Not that there's anything wrong with that sometimes but I think most of us appreciate a good bite. Anything you find too tender you can slide my way.

If a toothpick slides in and out easily, they're done. Otherwise, put the lid back on and check again in 20 minutes. Wrapping would just ruin that nice bark.

My bad on the math ! They are at FOUR hours not three - Toothpick has a little resistance.. I rotated so side with less pull back is to outside where heat comes up. I am thinking about done ! Thought spare were closer to 5 hours?
Anyway thanks for the replies !

With the pull back at the bones and the cracks on the surface, I think you should do the toothpick or bend test right now. If they're not done yet, they will be soon. Check every 15-20 minutes. They look tasty from here!!:thumb:
