View Full Version : Next Saturday: brisket or pulled pork?

The weather promises to be acceptable and it's been too long since I fired up the WSM, so time to get my smoke on. Now being a Texan, brisket is king and it is my favorite thing to smoke. But... I haven't smoked a pork butt in a long time, and they sure are oinkalicious.

So please help me decide! Tell me which one and why, if you woulda.

Do both. Eat the brisket and save the pulled pork for another day. But if its only one...come on man! You're from Texas! Time to smoke up a brisky!

Maybe you should ask the people who are going to eat with you my wife usually tells me what to fix and how much to fix and when to start and tells me when it's done lol

I like both. I get more milage out of a butt or two.

Did a butt this past Saturday and gonna finish off the leftovers tomorrow night with a batch Southern Eggrolls.

They are egg rolls with pulled pork, hickory sauce and slaw. Wrapped up tight and fried quick. :thumb:

Both. Start early and get four hours of smoke on the pig butt and wrap and throw in oven.
Then start the brisket.

I just did a pork butt on Saturday and now I'm wanting some brisket. So I say go for the brisky.

Brisket, because beef is king!!
But, you obviously have a hankering for some pork butt.

Do you a nice brisket- get it our of your system.
Pork Butt the next week
Spareribs the week after
Beef Ribs the week after that

/repeat cycle
/shop for larger pants

A WSM should be big enough for both! Then make a sandwich with both!

Pork is the most bestest. Brisket though, when done right, is a wonderful thing.

I gotsta do a brisket!!! My go-to method has been HNF for a while now but I've been hankerin' to do one lower and slower. Will use the water pan this time (instead of having a clay saucer in it) and try to keep it around 250.

Of course, there will be other delectibles cooked with it throughout the smoke.

I normally do both at the same time. It's difficult to foul up a butt so I pay mostly attention to the brisket. :thumb:
