View Full Version : Nephew's 1st B-Day Cook (Shove 4 Meat in One Hunsaker)

Rolled down to FL for our Nephews 1st B-Day today. Turned 1 yesterday or something :biggrin1: and the party is tomorrow. Wife's sister and her husband are awesome and we just planned on coming down and possibly bringing some of the frozen bbq I had ready to go since I figured it wouldn't be but maybe 20 people. Then I was told 50 so I got more excited and said I have a lot of that meat to cook in my freezer :becky:. Had a 16lb prime brisket and my trinidad scorpion corned beef in the freezer. Picked up a couple butts before we left too.

With the tiny human we got up during a feeding time at 1am and left and got here around 9am. Once we arrived I jotted out to get stuff for sides. They have a close Costco (which also has Prime brisket :-D) and stopped at the grocery store as well.

Here's the extra Pork belly I needed for tomorrow along with random crap from walmart. Sides were just going to be coleslaw and bean, but wife said to also make mac so grabbed stuff for that too.

They told me food to be ready around 3pm so initial plan is brisket, 2 butts and 2 halves of corned beef go on in the morning about 6 or 7. Using 2 racks it should work and I'll wrap some of it and finish in the oven and then the pork belly will go on later for pork belly burnt ends.

Off to have another drinky :clap2:. As standard I promise a half assed delivery for the cook day :becky:

You are a good man, Jason. Cooking that much in unfamiliar territory. Good on ya! So, you made pimento cheese with the extra cheese, what about the other 18 lbs.? Isn't that the package size, 25 lb.? Have fun in Florida and good luck with the cook.

Better to have a half assed delivery than none at all! Can't wait to see how it goes with the 4 meats in the saker. Take pics of that definitely!

Alarm was set for 5am and woke up around 3 which is pretty standard on the weekends for me :loco:. Started the smoker right around 5 and got the 2 butt, brisket and 2 halves of corned beef on

Then got the corned beef in there as well. So basically 2 packers up top. It is snug, but pit is running great

Iced coffee flowing and just relaxing outside watching smoke

So plan is to let these roll for 3-3.5hrs and then wrap and finish brisket and corned beef/pastrami in the oven to make room for the pork belly burnt ends. Will steam up the pastrami in a pan. Eating 3-4'ish so goal get most stuff done and holding by 1pm so I can toss beans and mac into the oven.

Everything is looking good, but I must admit, that pumpkin ale does nothing for me. I haven't found one that I like at all, but I am all into Octoberfest brews.

The bellies from Costco don't have skin so didn't have to remove, but the times I've gotten them with skin I do remove and cook the skin later by itself.

Don't have such low standards :becky:. The pictures are just a facade. My body just wakes up early for some dumb reason. Brisket was solid. I even ate more than a few slices
