Need ideas fast...

Have a whole tenderloin that i cut in the middle and down the center to make pork tenderloin cubes. I was going to fry them as little pork tenderloin nuggets for some guys coming over tonight. Then i got thinking...

Anyone ever smoke a tenderloin and then dip it in bbq sauce "like' batter then fry it? I'm thinking too much sugar and it'll burn so...

Another idea...smoke, sauce, freeze, flour, egg, panko bread crumbs then fry?

I want them to be really bbq flavored without dipping.

I've never done it, but if I did (pure untested scheming here):

Rub and smoke to about 120-125 with your favorite wood.

Pull, rest for a bit, and cube.

Dredge in a egg / flour mix loaded with your favorite rubs.

Fry hot and fast.

Just how I imagine doing it.....:-D

Why not just fry them as you were, and toss in sauce...like wings

I have smoked one to very rare 105. Rested then cooled to 39F. Then I pounded it flat and soaked it in buttermilk, breaded it in corn starch/flour (70-30 ratio) with salt and pepper and had an amazing pounded pork tenderloin sandwich.
