View Full Version : Wife threw me a curveball

Thawed out an 8# Butt last night to cook Saturday, wife texts me at 11:30 asking me if it's ok if we eat at her brothers house tomorrow, he wants to cook dinner for us. Won't have time to cook it until Wed/Thur so I decided to cook it today for dinner, quickly lit a compact chimney of charcoal. While waiting for coals to ash over, filled up the charcoal basket, trimmed and rubbed the Butt.

My plan is to cook at 325+ until I get the color I'm looking for, wrap in BP upping the temp to 350+, hoping to get it done in 5hrs and give it an hours rest, well see how it works out for me.

Rubbed with Swamp Boys using chunks of Pecan and Hickory for smoke.

Looks good to me, plan on checking for color at 3hrs in.

I like that plan. Actually, any plan that includes the letters BBQ is a good one. Good luck and I am sure that it will be quite tasty.

3hrs in time to wrap, Thermapen tells me IT is 155 was hoping it would be higher, think I'll bump the cooker temp to 375. :shocked:

Took 5.5hrs before it probed like butter, so 30min longer than I was hoping, they're done when they're done. Peeled the butcher paper back and pulled the bone, as you can see the bone pulled clean. Going to let it rest for awhile then chop it, have some leftover smoked Mac N Cheese thawing right now, keeping it simple tonight.

Plated, moist, tender, no sauce needed, my wife likes sauce though so she put a little Blues Hog Original on hers.

Looks great! I love butts as they are the only meat I have yet to screw up -- very tolerant to however you cook it.
