View Full Version : How long can you hold brisket in foil / towel / cooler?

I'm smoking a brisket and a butt today, and so far the cook is running a little ahead of schedule. I'm a long way from done, but just in case, how long do you think I can hold a brisket that's wrapped in foil/towel/cooler?

If the cooler is packed tight I have held 4 hours and it was still to hot to handle.

^^^ What BillN said. I've held for 4+ hours and still too hot to touch without gloves.

Remember that too hot to touch is 140 or so unless you have burned out the nerves in your fingers.

If more than 4 hrs consider a low temp oven or better yet a cheapo turkey roaster they can go as liw as 140

Preheating the cooler with hot water will help.

Foil wrapped brick right out of the oven will keep the cooler nice and toasty too. 4 or 5 hours is no hill for a climber. You will be fine.

How long can you hold? That is a very subjective question where no hard-fast answer can be given. It will be "hours", but that's as close as anyone can come.

You can hold until the IT hits 135, and then 4 hours more.

Given the fact that this time-frame will likely be 6-8 hours at least...I think you can get your own cook timing figured out.
