View Full Version : Friday off work, 80* and sunny, time to cook on the Shirley

It'd been a while since I fed some logs to the Shirley, so I figured when better to do it than a sunny mild Friday off work. I have a few Prime briskets aging in the fridge that I've been picking up at Costco, so I pulled the oldest one - 13lbs before trimming. I also had an 8lb pork butt and a couple slabs of spares in there, so I threw them on too.

I injected the brisket with Kosmos Prime Reserve and the butt with Chris Lilly injection. Everything was rubbed with EAT Barbecue rubs - Most Powerful Stuff on beef and Zero to Hero on pork. I didn't bother saucing anything during the cook, but the brisket was wrapped in butcher paper and the butt in foil once the color was where I wanted it.

I had a stack of oak splits that were about the right dryness but felt they burned cleanest when I was running the cooker between 275 and 300*. The butt finished in a little over 6 hours and the brisket slightly under 8 hours.

Everything came out great, but the brisket was exceptional. Fork tender flat slices without falling apart, and melt in your mouth cubed point / burnt ends.

Nice pictorial!! Check out that smoke ring! I get a half cord of wood delivered tomorrow cause I'm totally out right now. Can't wait to build my fire tomorrow morning and get some meat on the shirley too!!

I agree Czar!

I'm itching for excuses to put a fire in my Shirley. Even a few brats and a pizza. It's the magic of lighting the firebox that relaxes me

Thanks everyone! My only regret is not doing 2 briskets this time - I've given away a few sampler plates and there isn't that much brisket left. Which means only one thing....gonna have to do some more brisket soon.
