Apple juice or a mix of apple and white grape juice, then I add a few shakes of Worcestershire and some canning salt.

Back in the day when I still used a stick burner and needed to spritz in order to maintain moisture, I used a number of spritzes. I used just plain apple juice, equal measure apple juice and apple cider vinegar, apple juice and white grap juice, white grape juice and cranberry juice. Just about any fruit juice will work. I've also used apple cider vinegar and water, water and Tabasco (red and green).

A spritz is really nothing more than a means of adding moisture and another layer of flavor. But you can also baste a cook instead of spritzing and that opens up a real wide range of flavor profiles. I've pulverized peaches, pears, apricots, etc. Anything that pairs well with the protein being cooked is fair game.

Let your imagination be your guide. What have you got to lose? Spritz, baste whatever. Just experiment and enjoy!

Do you find it's necessary to test the spritz every few minutes... like for quality purposes?

I use a mix of 1 part each of vinegar, water and Minute Maid cranberry, apple and raspberry juice. I prefer not to have the spritz be too sweet.

I go with a mop if I add some of the dry rub to apple juice and vinegar. If I want to go with a darker look, I add pomegranate or cherry juice diluted with white vinegar.

Sometimes cider vinegar and sometimes apple juice. About once an hour. I used to use a recipe called "mels moppin sauce" which was good but was a mop and not a spray-just took too long to apply.

I don't spritz.

I don't inject.

A proper finishing sauce applied after it's pulled apart is how I roll.
