Ok, so here is the maiden voyage for ribs on my Weber. Minion method with the Weber briqs. Tall CI pan and cans with water to provide thermal mass and moisture. Mustard slather and Weber KC BBQ Rub. The second pic is the ribs after about 1.5 hours. Temp is holding steady at 250 degrees.

Do you guys rotate them when doing like this? I plan to wrap after 2.5-3 hours, but would prefer not to if not necessary. Thoughts?

I would rotate them as you go. May not have to wrap.

Thanks! Just rotated them at the 2 hour mark.

When they start to pull about 1/4" back from the bone end, if wrap. Some use butter, brown sugar and honey. I wrap without that stuff, cook for about 1 hr then unwrap and sauce. Back in for another 30-60 mins.

I cook around 300*+

Wrapped 2 and left the 3rd nekkid. Also added a few briqs.

And done! Not bad, but this rub might have a bit too much kick
for my crew.
