View Full Version : Labor Day Multi Day Cooking Thread (includes pig head)

Trip down to visit with my wife’s family down in FL. Love those guys and they live a mile from the beach, but they have friends with a house directly on the beach that they aren’t using so we are all mingling there for the weekend :becky:. Brought a Hunsaker down to cook for at least the first 2 days.

Today is just a full corned beef packer from RD since we only have about 10 of us tonight. Then tomorrow is pig head, brisket, butt, ribs and maybe sausage I brought too. Will be fun since I can let the drum run and play with the kids in between meat stuff.

Well...that's a pig head all right. How much meat is useable once smoked.

I've actually never done a yield measurement on the pig head. Most is skull. I'd say 30%. This was a 15lb head. Cheek meat is awesome as is the tongue. I'll try and get another eyeball eating video too :becky:

Keep us posted on the pig head. I'm picking up two 45# pigs in a couple of hours and we'll be spit roasting them on Sunday. I think I'll have to cut the heads off to get both of them on the spit.... but I'll have a drum cooking some loins and could hang the heads in there.

Brains, eyes and stuff can be a little weird for folks, but that cheek meat is just amazing. Like the best pulled pork you ever had :-D

Brisket and butt into the oven. Took a little moving and shaking to get things arranged, but it's all good to go. Head back on the lower rack wrapped up. Then put ribs on, both tips and trimmings from the end of st louis racks.

And someone made this ahi tuna mango dip that is insane :-D. Hoping to have most all done around 4pm and just resting

Everything is done and holdingg. did osme pig head sampling and kids loved it and combo'd beam and kraken in one pour and some missed the cup........I promise nothing after this post...............:shock:

Thanks for posting the head photos.... I like the color you got on the pig head, that's what we're shooting for on the skin, and I plan on scoring it with a razor knife on the shortest setting. It took me and my cookin' buddy about an hour and a half to prep both pigs (light trimming, seasoning, injecting. They are now packed in ice just chillin' until tomorrow. Hopefully we'll get them spinning by 7:30. I'm going to experiment with spraying with apple juice and see how that works on the skin color. I'll have one of my drums smoking with 3 pork loins hanging in it so even if the pigs take longer than expected we will have some meat to serve. Here is one of our pigs, it looks like he was in a bad bar fight. I'm thinking of calling this one Bad Bad Leroy Brown. Decorations will be the traditional apple, and instead of cheap sunglasses I'll use eclipse glasses. :biggrin1:

And after a "short" delay I'm finally posting the rest of the pics. It was all great and just about everyone tasted the cheek meat off the pig head. One of my 12yr old nephews ate one of the eyeballs with me so gave him mad props there :-D.

Also took leftovers and put them on some take and bake pizzas someone picked up the next day for lunch. Was a lot of fun with family over the weekend cooking at the beach .

We didn't quite get the crispy skin I was after on our pigs... but the color was nice, and with some eclipse glasses there were photo op's right before carving.

Jason I love your cooks As usual this did not disappoint I really like that pigs head How long did you cook it and at what temp- if you posted that I missed it

Thanks George. Smoked about 3hrs at 300 and then wrapped in a pan with some water and took about another 3hrs to finish. Most heads I've done have all been in the same ballpark for time based on 300.
