View Full Version : Best Home Fries ever, at least they tell me so

Ok, so I have made full spreads with prime rib, turkey, ham and all the fixins. After hours making all that I threw in my homefries just as a starch, the kicker was all I heard was "everything was great....but those homefries!!! OMG

So:

4 russet potatoes peeled and cut in half then into eighths
1 green pepper sliced into 1/4 inch strips
1 sweet vidalia onion sliced into 1/4 rings

Spices all to taste
garlic
cayenne
salt
pepper
crushed red pepper
hungarian paprika


Boil the potatoes until tender with a fork and drain
MEANWHILE saute the green pepper and onion in butter till done

In a large saute pan START with 1/2 stick of butter and add the boiled potatoes and sauted green peppers and onions.

Add butter as needed if you see the pan getting dry with all ingredients cooking. Mix nicely and add spices as desired. The trick to the dish is the paprika and apparently the garlic (it's what ppl love)

Start the saute on medium heat to get everything going for about 5-7 minutes BUT THEN go low and slow. Let everything cook slowly for about 15-20 minutes until the potatoes are nice and starchy and look like they want to fall apart. Stir often and taste as often as you'd like :)

variation: you can add some cooked/sliced hot italian sausage in the end also

I know it's blasphemy, but I start homefries by cutting the potatoes, throwing them into a large bowl with some butter, covering with plastic wrap, and microwaving them for 10 minutes. I picked that up form Cooks Illustrated at some point. I like that it leaves the potatoes lightly coated in butter, and not as wet on the outside as when they are boiled.

While they are in the microwave, I saute the peppers and onions in the big cast iron, and then set them aside so they don't burn. I crank up the heat, add some more oil (or bacon grease, if I have any), and then add the potatoes. Having grown up in Maryland, I always season my homefries with just Old Bay.

I've never given much thought to home fries.

Spuds, knife, peanut oil and seasonings. Done. Fast & easy.

Dub, you da man!! I keep seeing that "2 Gringos" appearing over and over. It's got to be good, what does that chupacabra taste like? Spice?

There is a Cajun version that I really like, too. Cajun version reminds me a great deal of Bojangle's spicy chicken seasoning.

The original tastes like a combination of Lawry's seasoned salt, cumin, freeze dried jalapeņos, chili powder, black pepper, cayenne and other good stuff.

There's not much heat...just a great flavor.

I tend to use it as a seasoning...not a rub. Teenagers in and out of the house like it on their pizza and fries. I really like it on eggs.
