View Full Version : Plain ol' butt and smoked carnitas butt

Putt on two butts this morning. First (left) for pp later this week with straight forward rub. The second I've marinated overnight with orange juice, limes, adobo chilis and rubbed with SPOG plus ancho, chipotle and cumin. Going to take that one off and braise after about 4 hours.

delicious. The pork of authentic carnitas is fried in lard to get crispy bits. The bark is a good substitute with the added smoke flavor. Will do again.

Glad yours turned out. I have a recipe I use for Carnitas on the stove top. I decided to blend all that up and make a rub for a butt once. All we could taste was the Cumin. It was so bad, the dogs wouldn't even eat it. Haven't tried again.

I like cumin but I think a lot of recipes overdo it with cumin
