Didn't want weeks worth of pulled pork close to vacation time so I decided to do this pork butt in two ways:

Even the bone got a bit of action with the lemongrass marinade. No after pic because I left it for the wife when I went to run errands...

I made a grilled pork banh mi without all the veggies. Okay, so it was a French baguette with a lot of pork. Same difference.

I seldom trim anything when I prepare spareribs, but there are those bits that are just going to be wasted due to crisping, so I put them in a zip lock bag in the freezer. I've been grinding them up for meatloaf, this gives me something to look forward to to do twice a year when I accumulate enough pieces.
