View Full Version : An INKBIRD Cook... Morel Stuffed Backstrap

Brethren KenInk so kindly sent an INKBIRD thermometer for me to test. Thank you again!
I decided to give it a go on a stuffed venison backstrap.

The INKBIRD comes nicely packaged..

6 probes included..just insert 2 AAA batteries and you're set to go.

I cut and butterflied a small section of venison backstrap..

Gave the backstrap a quick cure for about one hour..sprinkled with the cure, bagged and chilled for one hour. Rinsed and ready to stuff. (Helps keep the venison moist when I take it above the rare stage.)

hydrated some dried morel mushrooms from my stash...

Layered the backstrap with a cooled wild rice blend, then the morels..

rolled and wrapped in a bacon weave...

Sprinkled the stuffed backstrap with cracked black pepper and inserted the INKBIRD probe...

This is where I ran into a problem.
My phone is not compatible with the INKBIRD. lol
I decided to use it anyway!

For info on the Bluetooth feature of the INKBIRD, I recommend Brethren Titch's post... http://www.bbq-brethren.com/forum/showthread.php?t=250689

Into the drum... Probe #1 inserted into the venison. Probe #2 placed on the cooking grate.
The thermometer reads in Celcius. No way to change it to Farenheit without Bluetooth.. It was easy enough to calculate.

My drum's sweet spot is 275F...

Was aiming for an internal temperature between 160F - 165F. Pulled the meat off at 70C and let er rest..

I liked the INKBIRD. Even though my phone wasn't compatible, the INKBIRD worked just fine! I use bluetooth on my phone with the Anova and assumed this would work too. Nope. Now I'm on the market for a new phone. Suggestions are appreciated! lol

I've not set a limit but I'll be purchasing from my local phone provider..they have a limited selection. I'm using a Samsung Galaxy 3...looking at the 8 model. Also... friends tell me I need to switch to an Iphone.. I know nothing about them though. lol

Thank you! I believe the requirements are "Iphone-4S or later, Android 4.4+devices with bluetooth 4.0 module".. taken from the Inkbird box.
I use a local carrier...it gives me a discount on a new phone if I stay with them. Thank you for your help!

I amazed that after who knows how long, and after who knows how many posts, you still amaze and inspire! I have a hard enough time just making sure my fam isn't tired of the stuff I cook. :oops:

Go Galaxy 8 and don't look back. Better water resistance and it doesn't require a cult following either. I have an iPhone 4S for work, hate it. I feel dumber having used it even.

I did however just get a Moto Z2 Force, but the Galaxy 8 was on my short list. I just got a better deal on the Moto. I had a Galaxy 7 just prior and it was fine. I switched companies though, so had an opportunity to go in another direction.

As for the cook, Ma'am, that's a piece of art wrapped in bacon. Wonderful plated shot. I left drooling. That shot can't get any better. Congrats and kudos to ya!

PS - I've come to expect some bucolic backgrounds to a lot of your cooks. Am I wrong? I looked forward to those shots! See what you've created?

Thanks Blue! It does add salt to the meat. I rinse well after the cure then avoid adding any more salt via seasonings or rubs.

Interesting thing about Iphone.

I also have but seldom use our Imac. Every text I get from other IPhone users not only comes to my phone but to my Imac. I can tell when the Bride is searching and what she's searching on the Imac from my IPhone. We can text from my iPhone to Imac and back. Pretty much anything I do can be seen, if not seen then discovered.

It's probably a setting that I could turn off- like Air Drop & FaceTime- it's turned off. I seldom answer my Iphone, I don't have voicemail set up and any sites I'm a member of the private messaging is disabled.

I still have a lot of fun. It's the Vintage Iphone 5- no letters afterwards. :-))
BTW- I average less than 30 minutes talk time per month. So basically it's everything except phone.

Thank you Keith! The morels grow here...maybe two weeks out of the year. I gather them in the spring.
