View Full Version : New rub test on baby backs, Mexican ribs

I did a little test with some seasoning I had found at Aldi's. It is Tanjin which is made in Mexico. It is a simple mix, chili peppers, sea slat, and dehydrated lime. As a comparison I made another rack with Plowboys Yardbird. I seasoned each rack the night before. The were on the Weber kettle with a slow and sear for 4 hours at 275 with Royal Oak lump and wild cherry wood. I added brown sugar to half of each rack, something I normally like. I also sauced the Yardbird rack and the Tanjin brown sugar half at the end.

Results, I really liked the Tanjin. There was very little heat from the chili peppers. However, the lime was distinct. It accentuated the sweet from the pork very nicely. And, it was a very different flavor. I will do it again but it will not be my normal rub. I recommend you try it.

Mexican beer "cocktail"... IMO -be a waste of a GOOD beer- but a very refreshing summer drink using a Mexican light beer or even a domestic lite beer.

In fact... one (or two) of those would go nicely with my meal today.
