With some smoked sausage from my butcher, strategically placed above.

Going to try something different this time and pan them with Liptons onion soup mix instead of beef broth.

I can't stand doing the same old thing all the time, I always got to be messing with stuff.

Three hours in, smoked with oak and wild cherry. Forgot to add that I rubbed them down with Worcestershire sauce and hit them with some Smokin Guns hot rub before smoking.

They're at 155 degrees internal at this point, now they're headed to the oven for a couple hours

Look'in good so far. One of my mother's friends used to cook brisket using Lipton's onion soup mix in about the same way. It was good. I will be interested to see how yours turns out. I have never tried it, but think you are going to like it.

They didn't probe tender till 212 degrees. Tasty, but not as much onion flavor as I thought it would have.

Plated up with caramelized onions, homemade bbq sauce and some of mommas cheesy taters and bacon beans.

I'm the same. In summer I typically host family get together. They're often my trial audience, few winners and few duds mixed in.
