View Full Version : Cornish Game Hen Tips????
I am gonna grill,cook,smoke,whatever a dozen Cornish game hens tomorrow.Any tips or tricks you can share?I have grilled them many years ago,just like chicken.400f Indirect til done.I am thinking slow,light smoke,then crank it up to crisp skin.Thoughts?
I rub them with olive oil, coat with Plowboys Yardbird, and smoke hot and fast. I would show you how they turn out but the stupid issue with Photobucket won't let me post the picture.

That is what I am lookin for! I thought I remembered hot ,Indirect for crispy skin.Thank you.

Oh and one more thing. When doing Cornish hens hot and fast, the difference between undercooked and overdone and dry in the breast is only about 10 minutes since they are so small.

Another option would be spatchcocked if you have the time.
