Just under a 6# Eye of Round Roast, light coat of EVOO and seasoned with BPS Little Louie's Garlic Salt w/Black Pepper and added more course Black Pepper.

Threw a couple of chunks of Pecan in the charcoal basket for smoke.

Pulled the Roast when the IT hit 130 and let it rest of 30min.

Fresh Sub Roll cut open and toasted in the oven until Provolone Cheese melted. For the Au Jus sweated a thinly sliced Vidalia Onion in a pot then added Beef Stock and brought to a simmer.

Looks awesome. That's a great item for the drum. Probably will have to do some top round this weekend.

First time cooking Eye of Round myself, it is very similar to Top Round. I like it and with the BPS Rub, additional Black Pepper and light Pecan Smoke I could enjoyed the meat without anything else, it took some effort to quit eating slivers of beef off the cutting board.

I looked at eye of round and didn't know what I'd do with it. Now I know, thanks! Great looking cook.

Looks great. I'll have to give this a try. We just use roast beef from the deli.:thumb:
