The thread title says it all. I am enjoying a 4-day weekend thanks to my employer and am cooking a couple of 6-pound butts for my wife's family. All is well! Happy 4th to everyone and thanks to our forefathers for their vision, courage and sacrifices!

I've actually been off for the past 2 weeks. I do have to go back on the 5th, sadly. I've done a lot of cooking in that time, for sure. Today I'll just be testing a corn casserole dish for tomorrow. Yesterday I tested a smoked mac and cheese, and it was a major flop. Decent taste, but it was all split/curdled. Not party worthy by any means.

I've got to go back overseas on Saturday. I've been home since late May and have cooked on my new Lang once to twice a week. Last Saturday was chuck short ribs and brats for an appetizer. Brisket for dinner that was a winner. I don't win often with it!

Separated the flat and point at wrap time and cubed the point for burnt ends. Took some fat from the deckle and placed it as close to the fire box as I could. The fat mostly rendered and was desert. Almost the entire 15lb packer was consumed. It was a good 11 hour cook!

I DO I DO!!!!!!!......Had a wonderful morning cooking this 11# on the “Big John”.....you know some mornings are just wonderful when no one says a word to you and you feel so blessed....and there is nothing there but your thoughts and food cooking.....this was one of those.

Amen! That was my morning. Got the butts on at 8 and spent the morning cleaning, a bit of yard work, and watering the lawn. I could get used to this!

Today is day 4 of a 5 day weekend! (Took a day of leave today)

Spent the morning picking blackberries and tending to the garden :-D

Chicken goin on the smoker tomorrow!

My wife has been in Tennessee for a week now, and until the 15th, I can cook ANYTHING I WANT.
Of course, the freezer is now full.:shock:
For the first time that I can remember, I have to think in terms of cooking for "Just one person".
Unless I decide to crash on someone else, I will be alone on the 4th.
Luckily, I like my cooking.:-D

I wish my wife wasnt home until the 15th I would order a new smoker on Amazon and use it before she got home so I wouldn't have to send it back

I have a 4 day weekend too. I tried my first brisket today. It had a nice smoke ring, and I feel like it was flexible coming off the cooker, but it seemed to firm up while resting in a towel so when I cut it it wasn't tender. :cry:

Not sure what went wrong. At 160 I put it in foil with some low sodium beef broth and took it off at 201F. I wrapped it in a towel and let it rest for an hour. It tasted good, just not juicy.

If I had to guess, I think the butcher may have been overly helpful and removed too much of the fat. Or, I just needed to cook it a bit longer.

In any case, I learned some stuff so it was a good day.

The 4th of July weekend is always huge in SW FL with the Offshore Grand Prix boat races. Folks watch from their boats or line our local beaches for the Sunday races. My group gets bigger each year especially with most having a 4-day holiday. I smoked 6 butts and 6 racks of spare ribs. Beautiful day, beautiful boats and beautiful people were everywhere! Tonight, I cooked the Mrs. A NYStrip on BGE.

We had the same last night,with maple plank smoked scallops and pasta salad.Good eats.
