View Full Version : Need quick, easy and good idea for PBC tonight

Just got home to Camas, WA after driving home from racing at Indianapolis Motor Speedway last weekend. My wife said some friends want to stop by so, me being a guy always willing to fire up the PBC, need to do something quick and easy that isn't burgers. Too tired after 2200 miles in 48 hours to get into a longer cook. Thanks my brothers and sisters!

How bout some caribbean jerk chicken kabobs with onion, green peppers, and pineapple skewers? Its fast and the MCormick jerk marinade recipe is 30 min.

Quick and easy, I am going chicken thighs. Bone in skin on.

Super simple but effective marinade/basting sauce:

1 cup real mayo
1/4 cup Ketchup
1/4 cup lemon juice
salt pepper and other seasonings to taste. Go simple or be creative, just minimize any sugars.

Coat the chicken well and rest in the fridge up to overnight, or grill right away. Brush on extra marinade while cooking if it drips off, just make sure to give it a good finish with heat to kill salmonella if you use the same marinade that was contaminated with the raw chicken, or alternatively save a separate batch for basting.

Well, for future reference if you decide on something else tonight, its 3TBs caribbean jerk, 3 TBS veg oil, 2 TBS soy sauce, 2 TBS white vinegar. Cube the chicken and marinate for 15-30 min.

Brats/sausage are always money off the PBC and nothing is easier if you are tired since you don't even have to season anything.

I second any chicken dishes, especially wings since they are quick and it isn't a big deal that you haven't been able to season or brine overnight.

Get some onions, cut them into rings, put a little BBQ sauce on them, wrap them in bacon and toss them on.
