I haven't posted in a long time. The lesser known cuts of beef TD was calling my name.

Started with some beef shanks.

Seasoned with some fajita seasoning I had.

Then they went on the Shirley....I'm cooking a brisket for later....

Then I made up some pico....

After 2 hours of smoke, they came in for some additional treatment....

Onion, Red Bell Pepper, and a mix of chipotle, adobo sauce, onion, garlic, salt, pepper, water and cider vinegar....Oh, and some beer went in later after i foiled it.

It's taco time! No sense in waiting for plating shots, these are really best eaten straight away.
