My Father's Day Meal to us

Have a brisket going for late week chili and Mexican dishes. So went with quickest meal I like. Stacked green Chile Enchiladas. KS CBP Oregeno Cumin Jalapeño Dusting Salt Chopped Green Chile and Hot Colorado GC Sauce along with a dollop of yogurt. All mixed with ground chuck and simmered. Stacked in layers with white corn tortillas pepper jack black olives and topped with guacamole.

I was hosting my friend from California and introduced him to Colorado Hatch Green Chili ladled onto a chorizo-stuffed breakfast burrito. He said it was the best breakfast he'd ever had!
