Did some smashburgers for lunch.Should have gotten the griddle hotter but still got some maillard going.

Rinsed off the belly I had brined overnight and rested on a bed of onions. Onto the jr.

Wow...not sure which looks better, the burger or the bao. Fantastic!

Sign me up! Whatchya doing for your bao, buying the frozen or making your own? I bought a huge steamer from Yue-Wah for doing homemade bao like 6 or 7 years ago and have only used it for veggies and crab thus far!

I was lazy and used Pillsbury buttermilk grands. Don't judge!
