Hadn't used the Blackstone in awhile, just been too busy.

Used some of my home canned chorizo...

Started with tatoes, onions, garlic, scallions and seasonings.
Heated the chorizo separately to speed things up. I was hungry.

Combined the tatoes and chorizo...

added a couple of fresh eggs..

and corn tortillas...

steamed the eggs to set the tops...

http://i245.photobucket.com/albums/gg74/cowgirls-photos_album/Blackstone%20Griddle/chorizo%20breakfast/chorizo%20breakfast%20039res_zpsw4odmazi.jpg

filled the skillet with the cooked chorizo, tatoes, onions, garlic and scallions...

topped with eggs...

http://i245.photobucket.com/albums/gg74/cowgirls-photos_album/Blackstone%20Griddle/chorizo%20breakfast/chorizo%20breakfast%20046res_zps4loeheno.jpg

added the hot tortillas and called er good.

Didn't need a stinkin' plate..... just used the skillet. :)

Oh, Yum! That looks amazing Jeanie. I love chorizo but never made my own. I have been doing some similar breakfasts lately, but your pics always look so much better than what's on my plate. That really looks good. As always.

Ya done made me hungry again Lady J! Do you use the same recipe for your canned chorizo that you'd use for a cased one? Any chance of a recipe share? :)

Thank you Chris!! Yes, it works for cased or loose. I used to purchase chorizo from an elderly Hispanic woman... she introduced me to her spice packets and that's what I use.
This is beef chorizo. I just use the seasoning to suite my taste. Mix the meat and seasoning together and do the "raw pack" method for pressure canning.
I'll see if I can find my canning times and let you know.
Thanks again Chris... :)

Found it. :)
I go with 12lbs of pressure....90 minutes for quarts
12lbs pressure ....75 minutes for pints.

This is raw packed, no liquid added.

My elevation is between 2,000ft to 4,000ft.. The times will be different for higher or lower elevations. (check your pressure canner)
Hope you have great luck with it Chris! :thumb: :-D

Canned chorizo? Does that make it shelf stable like SPAM? Sorry, I've never seen anything like that before. Looks like a real solid meal!

It's shelf stable for about 5 years. I "can" a lot of stuff.... living in the middle of nowhere, the power can go off for weeks. It's nice to have shelf stable food on hand and it also frees up freezer space. :-D

Canned, cold smoked salmon is one of my favorites to have on hand! http://cowgirlscountry.blogspot.com/2013/09/cold-smoking-and-canning-salmon-for.html

Jeanie, there's more to this than meets the eye, and I wanted to share a little something with you. A couple of years ago, when I was telling The Missus about your "tatoe" posts and how cute I thought they were, she told me the story of when she was a little girl growing up in Ohio as the second youngest of six kids and was just beginning to talk. Apparently her folks also referred to them as "tatoes" as well, but at the time, she couldn't quite pronounce the word correctly, so it came out like "taloes". Her folks were so enthralled by the new pronunciation that it stuck, and so, for many years, her mom and dad called them "taloes" instead, as did the rest of her siblings...
