View Full Version : FireDisc thoughts and jambalaya pron

I posted these pics in the Blackstone thread and decided it deserved its own post. :)

I'm very happy with the FireDisc purchase I made to augment my arsenal since losing my flat top due to space constraints on my back porch. I plan to use it for a lot of stuff including quick sears after sous vide, stuff like the pics below, frying in it, and flat-top style cooks for burgers etc.

It was a little pricey imo for what it is, but the construction is awesome, and the "disc" is super quality thick metal.

I also purchased a 120qt aluminum lid for it since I keep it outside (22" diameter) works perfectly to keep it clean between cooks and no rain from the wind getting in the pot for rust to kick in on the not so seasoned parts.

I cooked Jambalaya in it which turned out beyond fantastic. Bacon chunks, push to the outside, sausage chunks, push to the outside, cook chicken pieces in the bacon/sausage grease, push to the outside, in goes the holy trinity, salte and push to outside, add crushed/diced tomatoes, chicken broth infused with the shrimp tales/shells, combine everything, simmer away. Add fresh shrimp. Done.

That's a really nice FireDisc, and the jambalaya looks delish.

That looks like it'd be really fun to cook on, without being "too large" or unwieldy.

I bought a discada from http://www.southwestdisk.com. since I already have a 55,000 btu burner, I didn't need the whole but. I ended up with what they call the "Roswell - The 24" UFO Discada **Enterprise**". Put that on my backyard pro and made breakfast to break it in.

That night, I made Discada Nortena.

Excuse my ignorance. I've never heard of a firedisk. But.... I want one. I'm assuming it's like a big flat top with a propane heat source. Oh the possibilities.
