It's been a long while since I last cooked a pork butt.

Hit the butts with SPOG this morning around 0700, got the Longhorn up and running with pecan and hickory, then put 'em in to cook between 250-325 for the day.

Decided to try panning these at around 160F (plus, I liked their color). Wrapped 'em about 30 minutes later as I started to bump up the heat.

After a 90 min rest in the oven, the bones just pulled right out of the butts.

Discussed rub options with CINCHOUSE, but decided to just "dress" the 'que while chopping - AC vinegar and some hot sauce.

That's momma's spicy slaw in the bowl and King's Hawaiian Hotdog Buns (grocery was out of hamburger buns) for our "sammiches."

No plated shots, as I was called away to the table shortly after that last photo.

I don't know why I haven't panned butts before. The outcome was exactly what I wanted: Nice bark; Good smoke ring & flavor; Very moist and tender meat.

Interestingly, the bark on the bottom (though immersed in pork juices and fat) developed better than the top... prob due to the higher temps coming from the hot air flowing along under the diffuser plate.

Panning takes butts to a whoooole different level!

Great looking pig meat there Marc. Panning is something I've never tried even though I say that I will on the next butt cook every time..

King's Hawaiian bread of any shape is just made for PP sammiches.

Butts look amazing, reminds me that I need to do a few butts myself.
