Being the fire cheif of the local fire department, I am in charge of cooking wings for appitizers, at the yearly bbq get together on Saturday. Gonna do them Vortex style. Then seriously thinking about a brisket on Sunday or Monday possibly.

Happy Phriday Phu and pharkers! Been MIA for a couple of weeks dealing with some personal family problems.

Tomorrow I'll be throwing my buckboard bacon in the smoker to get all nice and delicious.

Happy Phriday Pholks. Been craving a phatty, so that and probably some wings. I have a contest next week, so possibly a pork butt to try a couple of things on. I hope everyone has a great, phun philled weekend.

Got two SRF Briskets going on tonight as well as six butts and 8 1/2 pans of mac & cheese for a catering gig tomorrow.

Also going to do some pork belly burnt ends too.

1 ribeye and 1 bison strip steak. Never had bison, so this should be interesting. Also going to clean up the Yoder and run some test on it to see if the controller is shot.

Brother Phu.....I have a slab of beef ribs that have been in fridge several days, hope they aren’t too far out of date......cause I’m on that tonight. I really wish I had a UDS today, just woke up realizing i’ve never cooked on one.....strange how those cravings apply to cookers as well as food!!!!!!! Hoping everyone has a blessed, happy, healthy weekend....

happy Phriday!!! i have my annual backyard bbq comp this weekend and have to cook tri tip, chicken, ribs and a mystery meat they provide.

Picanha sounds like a great idea! Might do me one as well.

I'll be making gumbo and wangs tomorrow, not sure about Sunday but the picanha idea is coming strong.

I have some country style ribs on right now getting some smoke. They will be going in with some unsweetened applesauce, sauerkraut, and onions for some quality time.
Will see what I can come up with for the rest of the weekend.

Haven't had a chance to cook on the WSCG for the wife since she got back. Got a couple thick Choice Ribeyes and some veggies to go with it. Might throw a couple of poppers on too. See what I find at HEB tomorrow before I know what I am making the rest of the weekend. That Huli-Huli Chicken recipe that I looked at earlier sounded good, but so do ribs...

Got some gorgeous Prime T-Bones going on the kettle tonight kissed with a little mesquite smoke. I'm a Ribeye man who hasn't grilled a T-bone in years, but I couldn't pass up this sale and quality.

Pork tenderloin tomorrow, then pit cleanup and maintenance on Sunday. Going to scrape, wire brush, and oil all grates. Do a good scouring of firebox and cook chamber, hit a couple of tiny spots on exterior with paint. After about 6 hours I'll heat pit to about 300 and steam it, then remove coals and hit inside and out with a light coat of oil. Once a year routine, week before Father's Day. Anybody do anything way different or anything you really like with maintenance on a pit? Have a great weekend.

Saturday: Steak (not sure what kind yet, gotta hit Costco) and some Shrimp for the family and in-laws...

Sunday: My 1st run at Pepper Stout Beef and a small 6lb Butt, with some Slaw and Mac & Cheese, while I hopefully watch the Pens raise The Cup in Nashville. Sorry Nashville fans...

Freezer Diving:

- Delmonico Steak with Oakridge Carne Crosta and Santa Maria tonight (Steamed corn on cob, roasted Brussels sprouts, and some fresh tomatoes to accompany)

- Some folks headed out the door on Monday, so sending along pulled pork sammiches and spicy slaw to accompany for the journey. Never done 2 butts at the same time (never had a rig big enough to really fit 'em)... but this should be fun on the Longhorn. Think I'll try the 160F (or good color), then pan option.

1 wet aged cab brisket, 2 pork butts, 2 racks of baby back ribs, and 8 chicken thighs. We are cooking our first KCBS Professional competition. Did I mention Its a Sam's Club tour local event in Harrisburg, PA in my home state. Oh and we were told that it's a Jack Daniel's Invitational Qualifier? Who ever wins will get a bung. This means the winner today could be competing at the Jack Daniel's Invitational as well as competing in the regional in Richmond, VA. The stakes are high. Don't get me wrong I know it's highly unlikely to win this one but a guy can dream. :)

Not really smokin', but grillin'. Gonna throw some shrimp and veggies (assorted peppers and onions) on the little Spirit.
Trying a recipe for shrimp fajitas that Mrs. Wookie got off the Food Network.

Doing homemade pico de gallo and guacamole too!

Looks like it's gonna be a brisket (bluedawg hot'n fast, first time trying this) and a chicken, following Malcom's brick chicken recipe, although probably without the bricks...gonna be a trial run for father's day and also a chance to see how my splits have dried out.

5 lb pork butt just started an hour ago. Cook is going great so far. Wood is burning clean. Temp holding well. Still have plenty of time left tho

I'm starting just a local ho hum choice brisket. I may have ran it over with my truck. Can't remember. Anywho...starting tonight for lunch tomorrow. Leftovers are for chili dinner and freezing for future.
