I have a round barrel type of smoker and I'm looking into the best way to add something so I can easily thread 3 to 4 probes right through the side. Any suggestions?

My wsm has a peice of rubber where you just push them right threw. Maybe you can order the peice from Weber and install on your cooker

Cut you a notch no port needed.

The above conduit connector is what I have on my UDS, works great.

You can also just not cut the notch and run the wire under the bottom of the lid. On my WSM I have my pit probe sticking through the grommet, and meat probe I just close the lid on the wire.

This is what I did to my WSM 18.5 and my kettle after I got the Thermoworks Smoke because the probes were to big to go through the original grommets I had. It works really well and it took like 5 minutes to do and cost nothing.

That's what I did. Makes everything EZ.

Put some Cajun Bandit ports on my older 18.5 WSM. They are a hassle. Did the slot & plugged the CB ports.

My 14.5 WSM came with the silicone grommet. It's a pita. So, it got the notch, too.

Cajun Bandit also sells probe ports:
