Found a couple of chucks on sale the other day and thought I would run them through the grinder just to fill the freezer. I had a little over pound left and thought I would do something with it other than just bag and freeze. I had tinkered with this idea several years ago and kind of let it fall by the wayside. I love tacos so the idea of a taco sausage that I could cook quick when I had the craving holds some appeal to me. Anyhow.....on with it.

Couple of chucks run through the grinder. A bit over 5 pounds.

Ran it through a finer plate on the next pass.

Put a couple of 2 lb bags in the freezer and took the rest and mixed with 3% taco seasoning (homemade blend of very peppers and spices), .25% cure #1, 4% powdered milk, and cheddar cheese.

Ran the mixer for a minute or so.

Stuffed into hog casings.

Put them in the fridge over night to let the flavor come together and kind of firm up a bit.

Had no plans for supper last night, so thought it was time to give a couple of these a shot. Didn't want to mess with the grill or smoker so just went the griddle route to keep things quick and easy.

Dropped it on a tortilla with a bit of lettuce and called it good.

Not exactly the same as having tacos and it could still use a little tweaking. Thinking about adding onions to the mix if I continue down this path. It worked to scratch the taco itch and could not have been much easier.

Your on to something good. Try an al pastor sausage with onion cilantro and some pineapple. Mmmmm

Couldn't get much easier?? Throwing some ground beef in a pan with taco seasoning is easy... looks really good love to try some of your creations some day

That's pretty creative FBJ! When you put the cure in, I thought you were going to cold/warm smoke it. What did the cure do otherwise? Just change the texture a bit?

The plan was to smoke it.........but the plan changed. I still want to smoke the others if my schedule permits.

In any case, the cure is just insurance on the food safety front, so I probably would have added it regardless. As far as I know, no change in texture since it was such a short time from mix to cook, but I could be wrong. If you compared one with cure with one without I suspect the color would change...........I think you gave me a new experiment.

I dig the idea.. I'm thinking Al pastor type flavor too... Chipotles and adobo, grind some guaillo and anchos, maybe use sour orange juice (or orange juice and lime), fresh garlic? I think I'd want to top the sausage with the onion, cilantro and pineapple.. I think you're on to something great :thumb:

Very cool idea... I am always trying to make other meals into sausages. This looks like a good one. I like your idea about adding onion. Maybe some fresh cilantro added to the mix? Some lime zest? Just trying to think about the flavors that make me think of Mexican food.

This idea is fantastic!

I have made charizo, breakfast sausage, chicken Italian sausage and brats.

Slim Jims, fast aged pepperoni and this is on the radar for next...
