View Full Version : Cherry-Smoked NY Strip Steak (w/ Pr0n)

I was watching a recent episode of Steven Raichlen’s Project Smoke this weekend. And it just so happened, I had these in my fridge from a Costco run earlier that morning...

So, I figured, why not? Here's my take on his Cherry-Smoked Strip Steak with Cutting Board Sauce...

Seasoned with salt and pepper.

On the grill at 275 with a couple of cherry wood chunks.

Pulled when internal temp hit 110F and rested for 10 minutes while grill came up to temp.

Then back on to finish the reverse sear.

And finally, on the cutting board with olive oil, herbs, and poblano peppers.

That's an awesome looking cook! Love doing board sauces but she doesn't like many fresh herbs outside of cilantro. :sad:

Thanks Cowgirl. First time I have tried reverse searing and will not cook steaks any other way again; given the choice.

I actually watched that episode last night and pulled some NY Strips out of the freezer to cook this weekend. I wonder where he got the 4 inch thick strips he cooked on that episode. 2 inches is the thickest I can find around here. Great looking cook!
