So I picked up my used large big green egg. Now I need it to quit raining. This is a picture of it when we picked it up. Came with a nice cart with a marble top, plate setter, daisy wheel, ceramic cap, ash tool, stainless grate, grill brush, a bag of KJ lump, bag of BGE lump, and assorted wood chips. Previous owner is a friend of my father in law and offered to warranty anything I need. He just put a new fire box in it. It was still in the box. Now I just need to pick a first cook. Any suggestions?

Nice cart, I got a Smokeware cap for mine for rainy days. First cook I agree try Spatchcock chicken. Enjoy the Egg.

That is a nice setup! Chicken is a great first cook. I always loved pizzas on my egg. Enjoy!

Nice! Keeping it in the fam so to speak and getting that warranty is icing on the cake :thumb:

I don't use my egg that much but when I do I'm reminded how versatile and fuel efficient it is

The best thing you can do is play around with the vents and see how you can adjust temperatures. I'm old school and only use the bottom vent to adjust the temp. Unless you're smoking something or under 300 degrees I don't find the top daisy wheel necessary.

I'd start with something simple like chicken. You're going to have lots of fun with your Big Green Egg!

I understand that you want to keep the inside of the egg dry, but do I need to worry about the outside getting wet? I have a tarp over the entire table right now. I was under the impression you had to cover an egg. I'm sure I can find a table cover better than a tarp. Previous owner had it on a covered screened porch. I do not have that option.

Remember,it is just a cooker.Nothing magic about it.There is a learning curve,but it is minimal.Once you learn where to set the vents for the temp you want,it is easy peasy.BGE's have turned a lot of average or less than average cooks into bloggers.Please do not fall into the trap.Most of the upgrades are not needed.You can improvise with things you already have on hand.PM me if you have questions.I have cooked on them for years and learned a few tricks that will save you time and $$$$$.

One of the first things I cooked in mine was Cochinita Pibil (using a pork butt). It is usually done with sliced pork and I decided to do it whole and let it cook to the temp where I was able to pull it. A favorite of ours is Myron Mixon's cup cake thighs (we call them muffin tin thighs).

Don't worry about the egg and the weather, mine has been out in the weather for 5 years.

My wife bought me a cover, but the egg takes time to cool down and I always forgot to put the cover on.

If it makes you feel better, throw a tarp over it once it cools down.

My Egg sits outside year round, uncovered. I've used it in thunderstorms and blizzards. You're good to go.

Thanks guys. I have a chicken planned for tonight. I need to get a pizza stone soon. As soon as I mentioned that to my wife her eyes lit up.

If you have a smoke diffuser plate just use that as your pizza stone. turn it upside down so the legs are down.

I like chunks better than chips, but either way you're managing the amount of fire by how much air is available. With the top closed your vents set the temperature by controlling how much oxygen is available. The chips (or even chunks) will flare up when you open the cooker but should settle down when you close it up. Another reason to minimize the time with the top up.

The BGE Stones can take very high heat and never crack. I have a few different stones. The BGE are definitely worth the money.

Gotcha. Ive been using the Maverick Tip Top Temp, and trying to get the hang of that

My vote would be for Baked Potatoes and Ribeyes.
That's a good looking set up you've got there.
The only time I use the cover for my egg is when the forecast calls for
freezing rain or sleet. Don't want to be chipping ice off of it.

I agree. Fill the fire box, open the bottom vent as far as it will go and leave the top off. That thing will get up around 700 and burn off anything leftover from the previous owner.

I mix the chips or chunks( which I prefer) in with the charcoal before lighting.They are dispersed throughout the lump for the entire cook.

With the dome closed, the chips / chunks will just smolder.

I prefer chunks in my BGE. They last longer than chips and will provide a longer smoke.

Put your chunks in dry.

We use wood chips when performing short cooks, such as grilling steaks. The burning properties of chips gives a good hit of smoke for the brief timespan the steaks are cooking.

For smoking, we use wood chunks.

She loved them. Took longer to cook them because I left the deflector in, but they were great. They even had a smoke ring. I put a couple of wood chips in as well. I'll do chicken Friday.

700* and a few New York strip steaks. Everyone loved them. Maybe the best I've made.

It'll go well over 700! I've had mine hit 950 and the temp was still rising, and flames were coming out of the top!

Tip : if you want the temps to go up faster remove the daisy wheel completely. I recommend doing this before it gets hot!

I don't think it even takes precipitation. I think every egg owner in colder climates has had the experience of attempting to open the egg on a cold morning and find it frozen shut.

I remember trying to use a hair dryer until someone clued me into starting a fire in the vent opening.
