I did my first cook on my homemade UDS today - hickory smoked ox cheeks with a black pepper and chilli rub. Ox cheek is similar in taste and texture to brisket. Trouble is, I've never had a proper BBQ so don't know how it compares, but it tasted good. One thing I will do next time though is trim more of the fat. Does this look like I'm on the right track?:

Beef cheeks are some of my favorite. Yours definitely look and sound tasty!
