Ok... next weekend we have a local bbq challenge where we do ribs, chicken, tri-tip... but they threw in a one bite challenge but you only got 5 ingredients and must be cooked on out door cooked. Problem is I know about 15 people out of 20 are doing something with bacon. I am looking for ideas that are outside the box

Bacon is a sure winner, so how about bacon wrapped anything. I once worked with as caterer that served dates stuffed with almonds and wrapped in bacon. A one-bite piece of heavenly bliss.

Asian Themed Pork Ribs (Baby Backs... long as you have the 4+ hours to babysit them)

Apply late... 2-2.5 into the cook... wrap...
Birds Eye Chile
Garlic
Ginger
Rice Wine Vinegar
**** Couple of spots left to your creativity ****

Marinade Suggestions (especially if you know ahead of time... combine with above)
- Soy
- Garlic / Chili Sauce (if want a bit more heat)
- Fish Sauce

Sriracha / Commercial BBQ Sauce Glaze / Apple Cider Vinegar - over heat for a few min... suggest last 10 min MAX once applied to the ribs

Thanks guys.... would love more with out bacon... I know it's hard but last time after about 7 the judges get tired of bacon

My go to right now is a bagetslice toasted with a tomato and melted motz... basil and balsamic reduction drizzle... Just wanted other ideas..

How about a nice plump scallop with a razor thin duck breast slice and pineapple chunck wrapped in prosciutto? Should crisp up nice. Maybe with a tiny shake of spicy rub (no salt) as the proschutte has enough saltiness. You will have everything in that one bite. Sea (scallop), Air (duck) Land (proschutte) Sweet, savory and heat. You can make the check out to Smokin Hoogie.....thanks

Thanks for the ideas guys and yes Tom it's public... it is at a friend's house in ramona and and everyone competing is from up here for the most part and knows most the people there.. We don't win money just a plaque and bragging rights.

How about a dessert item. After all that bacon something light and sweet will be welcome. Smoked peach or pineapple maybe covered with smoked melted chocolate? Maybe some bourbon terriyaki?

Crostini with a slice of beef tenderloin and horseradish. Brisket grilled cheese sandwich with a shot of smoked tomato bisque for dunking.

Thats why I was leaning towards bruchetta style or something with grilled fruit

Ribeye cap bites. Depending on how many judges, you could possibly get enough by pulling the cap from a single thick-cut steak.

Then serve the eye to the dogs :laugh:

if you can find some italian mortadella, you can roast it like bacon. Taste is fantastic.
Wanna try something really different? You can prepare a polenta (https://en.wikipedia.org/wiki/Polenta) (it's an italian dish made with cornmeal) that can be done also the day before. When it's cold, you can slice it, half inch thick, and roast on the grill. Serve it with some cheddar cheese melted on it

Do herbs count as an ingredient? Baked Flounder Fillets with Herbs and Bread Crumbs. I take a fillet and spread herbs on it and roll it up. I put sauteed garlic on top and cook it with butter. Top it with butter browned bread crumbs.
