Brisket I seasoned Tuesday night with Oakridge Santa Maria, Rosemary, course pepper, and olive oil..... wrapped nice and tight with Saran Wrap. Cooked on a WCS with pecan and alittle hickory for 15.5 hours.... would have wrapped at the end in Beef Broth and cooler for couple hours. But ran out of time.

Very nice, and unwrapped to boot. All that juice on the cutting board, mmm. My flat slices always get a bit of a dregde in that before serving, for the "sheen". :)

How is the summit treatin ya?

I like it.... was alittle learning curve at first. My BGE did better pizza. Otherwise than that. Think I would take it over ceramic every time. Produces

Well it was an 11 pounder.... 8 pounds was the pork...... The kids ate the entire brisket and an entire pot of beans. Along with the corn bread muffins. Had coleslaw left over and pork. So, I am thinking since it was only a few of us...... It must have been really good. Lol.....
