View Full Version : First time brisket help, please.

I put an 11.5 lb. packer on my WSM around 4 am ( shooting for a 5 pm dinner) and low and behold it was done at 1 pm. I wrapped it in foil, then in a blanket an put it in a cooler but I don't know if it will hold until 5. Do you think I'll have to throw it in the oven around 4:30 to bring it back up to around 140 degrees? Any experiences holding brisket this way? I want it warm but not dried out. I'd greatly appreciate the advice.

I would think it'll hold for 4 hours in there no problem, it's a big cut of meat and has a lot of heat within it after being cooked.

Did you let it vent off for a little bit before you wrapped it up though? This is important...

If the cooler is not too big, it should hold just fine. If you have to reheat, reheat on a higher heat (faster) till 155 to avoid drying it out.

If you wrap the brisket in foil and blankets then place in a cooler It will be just fine to eat as it is at 5 p.m. I see people doing this all the time on the forums. Most say they could go for many hours after cooking and the meat is still to hot to grab a hold of. As someone said above you must vent the brisket for a few minutes before wrapping and putting it in the cooler as it will continue to cook if you don't

Yes, it will be fine. It will still be too hot to hold.

If it'll make you feel better throw it in the oven at the lowest setting. Mine goes down to 170.

I did one last weekend. First time cooking a brisket other than prime in over a year and a half. Came out better than i thought it would. Ive never used my brisket technique on a choice but all worked out. A little cold today but it was warm enough last week to have to bring extra water to work.

Had guest over last night and they cleared out all my frozen strategic brisket reserve. Over 3 lbs of cooked meat. Looking to do a 2fer next chance i get....hopefully this weekend.

Thanks guys. 4 hours later it came out plenty hot and tender too. Eleven people and we killer the whole thing. Can't wait to do another!

Thanks for reporting back. I'm getting ready to do a hold for about 18 hours in the cooler. From what I hear, if get the cooler filled with towels and/or blankets, it should not be a problem. Your report gives me confidence to move ahead.
