Found a yellow tag tri tip nearing sell by date. Found a two# potential Nekkid Fatty on sale, and pork tenders on sale at frugal prices.

Fired up the Primo and seasoned lightly with Sucklebusters Gold Dust. Mesquite lump and maple smoke chunks.

Going to chop everything tomorrow and use half for red chili and half for green Chile Stew

I had a bite of the pork tender, and I wanted to rub that smoked elephant garlic all over. This going to make some killer chili and chile. I'm going back tomorrow and pick up a couple additional tenders.

Not sure if I could wait until tomorrow. Looks like some tasty midnight snack material. :)

Fatty removed and placed in fridge. Everything else into a pan with about two inches of leftover stock. Pork butt, brisket and chicken stock. Sealed tight and into the oven O/N at 200*. Will chop when it cools a bit. Going to get out two pots. Fry time One will have ground sirloin the other ground pork browned. Halving the smoked meats/veggies for each pot. One Green Chile Stew and one Red Chili.

Green Chile Stew is on. Used pork tender and a small handful of tri and all the drippings and veggies. Going to hold off on red chili. Meats to good :-)) will ponder.
