I have a competition coming up in less than a month, so I figured I better get my timing down on my food. Still working on getting the time down on the ribs. I would like them to be a little lighter. Dang hog had the most curved bones I have ever seen.

Can't comment on the competition aspect but the result look incredible to me.

Looks good :-D! Straight bones (or relatively straight ones), while nice are one of the last criteria I look for. Flipped meat side down you can see where to cut and even if they fan out a little that has never hurt our scores.

Looks great! I did some money muscle practice with a nice Smithfield Prime Boston butt, mine didn't look as good as yours and in fact was unusually small for some reason, but man it was tasty. Ate most of it before remembering to snap pics. Got some nice tubes out of it though.

The comp is in Bixby. I had some nice tubes out of mine too. I forgot to take a picture of them. My butts were Smithfield prime as well

It could all be in my head, but I feel like any time I cook one of the prime butts it's more tender and juicy than what I had been getting previously. The local grocer only recently started carrying them, which is the first time I'd seen them anywhere.

My money muscle gives me the most trouble, usually getting a little overdone, but it looks like you nailed it. Good job.
