Stopped by WINCO Foods on the way back from Texas Oncology with my daughter and they had the Smithfield Extra Tender bone in butts priced at .98 cents a pound so had to pick up four to smoke tomorrow. Some for eating tomorrow and the rest will be vacuum sealed and put in the fridge for the wife to use in some of her casseroles, for tacos and what ever else I can come up with.

Don't the "extra tender" pieces have artificial additives? What is the story on them? A butt is full of fat anyway right? Is the extra tender label simply a trademark?

I believe the "extra tender" or "simply tender" is just their way of marking the packages of being enhanced with a salt solution. Sounds better that way......

The extra tender line has a salt AND phosphate solution. Most just have a salt solution.
