Made the dough on Tuesday night and let it get to tasting good in the refrigerator until today. I always seem to get a little over zealous with the toppings.

I use 1/2 teaspoon active dry yeast per 3 cups 00, but I let it rise about 2 - 3 hours before putting it in the refrigerator.
